This morning after my run, I decided to nix my plans of a post workout "green monster" since Reece is over for breakfast. We wanted pancakes & lo and behold were out of eggs! So I was about to ditch the pancake idea, but realized that I can google anything! I found an eggless pancake recipe and being that i never ever follow recipes to the T, I added a bunch of other stuff; the recipe also said to let this rise for 5-10 mins. But of course I didn't bc I'm impatient & really hungry!

Eggless Chocolate chip Pancakes


Makes ~10 silver dollar pancakes, fyi they are poofier than yr avg.
1 c wholewheat flour
1 tbsp baking powder
1 tbsp sugar
1/2 tbsp canola oil
1/2 tsp salt
1 1/4 c unsweetened organic soy milk
1 tsp vanilla
dash of cinnamon
3 large heaping spoonfuls of bran (of course!)
eyeballed chocolate chips
Mix & make pancakes as usual.
