I don't have chickpeas on hand - so that was a dud. But I did have one over-ripened banana...and almond butter...and shreddded coconut. So this happened:
I added:
WET-
-1 smashed banana
-1tbsp canola oil
-1 whole egg + 1 egg white
-1 tsp vanilla
-3tbsp almond butter
-2 tbsp honey + 1 tbsp sugar
DRY-
-1/2 c ww flour
-1.25 c oat bran
-hefty sprinkle of ground flax
-cinnamon
-(a tad)baking powder
-sprinkle of salt
-shredded coconut
Stir together & bake on 350 for 25 mins.
Yields 15 sqaures in a... square pan.
They came out delicious-not too sweet at all [granted there were only 3tbsp of added sugary goodness]. Warning - a square of this curbs appetite. I think it would be a good pre-run fuel. A definite keeper.
